Lately, we have really been enjoying Thai food. We have recently fallen in love with Siam Noodle & Rice in Buena Park. Their menu is expansive and every dish we have tried so far has been spot on, tasting fresh and homemade! Other restaurants that we have enjoyed are Hom Mali Thai (Old Town) and Aroy Thai (Ravenswood). One of our favorite Thai noodle dishes is Pad See Ew, meaning fried (Pad) soy sauce (See Ew). We watch a lot of Youtube videos from Pailin’s Kitchen, and were inspired by her Pad See Ew Recipe. What shocked us was how cheap it is to recreate this dish. We spent roughly $20 on the ingredients, which turned out to make 6 servings!

The most difficult ingredient to find is the fresh wide rice noodles. Most asian grocery stores should stock the noodles; we found Chinese chow fun noodle sheets (found at Park to Shop Supermarket near the Lawrence Red Line Stop) which we then cut into 2” wide strips. You can find the sauce ingredients in either your local grocery or asian store (depending on the specific ingredient). – 6 oz protein of your choice, thinly sliced (marinated in 1 tbsp of soy sauce for 20 mins)
– 3 Tbsp vegetable oil
– 2 cloves garlic, chopped
– 2 eggs
– 4 stalks Chinese broccoli, chopped ( .25” pieces for stalk, 1” pieces for leaves)
– 1 lb fresh wide rice noodles (cut into 2” strips if they are already not pre-cut)
– Sauce (see below for ingredients)

1. Mix the sauce ingredients well.
2. Over medium-high heat, heat 1 tbsp of oil in a large pan or wok. Add all of the protein and stir fry until cooked through.
3. Keep the stove on while you set aside the protein on a plate. Drain any remaining liquid or oil from the pan/wok.
4. Add ½ tbsp of oil and 1 clove of chopped garlic to the pan/wok. Cook for 30 seconds releasing the garlic aroma.
5. Next, crack open 1 egg in the pan, letting the egg sit for 10 seconds before scrambling to break up the yolk. Add 2 stalks of the chopped chinese broccoli and cook for 1 minute stirring frequently.
6. Add in ½ lb of the fresh noodles and ½ sauce mixture (1 tbsp + 1 tsp), stirring until all the noodles are coated in sauce.
7. Let the noodles sit for 30 seconds to develop a crispy exterior, flip the noodles, and let sit for 30 additional seconds. Stir in ½ protein (3 oz) that was set aside and mix for 15 seconds.
8. Serve immediately!
9. Repeat steps #4-8 to cook the second serving.
